Chef- Food Production Manager

***** Prefer Experience in Moderate to High Volume Institutional Food Service *****

JOB SUMMARY
Performs dual function as Chef, and food Production Manager. Responsible for the quality, quantity, and timeliness of mealproduction; and for preparing meals in accordance with company recipes, standards, and procedures - under strict sanitary conditions -for arehabilitation institution. Also, assists the Food Service Director in the successful operation of the Food/Nutrition Services Dept.

ESSENTIAL FUNCTIONS
1. Prepares all mealsdaily according to company recipes, maintaining correct portion sizes. "Made-from-scratch" preparation is the standard!Working knowledge of requirements of national school lunch programs and the Joint Commission on Accreditation of Healthcare Organizationsis a plus.
2. Ensures the quality and freshness of all entrees, sides, and baked goods - producing them to meet specifications.
3. Determines the quantity of all menu items to be produced, utilizing companys food production system.
4. Maintains company standards for all meal and bakery presentations.
5. Distributes all products to proper areas of service.
6. Completes daily production records, inventory, and order food items for upcoming weekly menu/schedule.
7. Stores and dates all food items.
8. Researches and tests new recipes and brings them to FSDs attention.
9. Follows cleaning schedule as provided by management, using clean-as-you-go techniques.
10. Maintains an open line of communication with FSD, informing him/her of products and supplies needed.
11. Follows the uniform dress code and maintains proper personal hygiene.
12. Follows all company standards.
13. Assists kitchen staff at every opportunity.
14. Performs any other duties as assigned by management.
